I made my Loaded Baked Potato salad for the Thanksgiving Potluck at work today . These motherfuckers won't know what hit them.
Alright — here's your recipe:
5 pounds of red potatoes
1 pound bacon
1/2 cup sour cream
1/2 cup mayonnaise
3 tbsp yellow mustard
1 bunch green onions
1/2 pound sharp cheddar cheese, grated
Salt and pepper to taste
Preheat your oven to 350 - wash and cube your taters but don't peel them.
Line a large cookie sheet with foil — it makes it much less messy
divide your bacon in half — lay ~1/3 of the strips on the foil and cover them with about half of your diced potatoes. Lay the next 1/3 of your bacon on top of that and then layer the rest of the taters and top them with the remaining bacon.
Bake that for about 45 minutes or so — maybe longer depending on oven, altitude, and how tall your bacon and potato stack ends up.
When your taters are tender, pull them out of the oven and let them cool a bit. Remove your bacon and crumble it. Toss the potatoes in a bowl. Chop your green onions and toss them in, too.
Then throw all the other stuff in and fold it all together until all of your potatoes are coated. Taste it. It's not good for you and will probably lead to an early death via some sort of heart disease but damned if it isn't good.
Serve warm or refrigerate for cold.
